Production:
Xarello from very old vines fermented with skins for 5 days, then bled, and the must finishes fermentation in amphorae where it will age for 7 months.
Tasting Notes:
This is a white wine with a soft and elegant nose, with a small reduction and traditional aromas of aromatic herbs such as mint and wild fennel.
It expresses its full quality and complexity on the palate. The wine has a very long drink with the typical complex structure of Xarello.
It has a pleasant oily sensation thanks to the constant work on the lees carried out in the amphora. It has a very marked and refreshing acidity and an interesting saline finish. A very clean natural white wine.
Zibaldüs
This wine is suitable for seafood dishes such as spaghetti alle vongole or to accompany baked fish or any type of raw or grilled seafood.
