Production:
An ancestral method sparkling wine. Grapes are destemmed and macerated for 48 hours with skins before pressing. Fermentation at a controlled temperature. Bottled after two rackings to clean the must. Aged in bottle with manual remuage and manual disgorging before each order.
Tasting Notes:
A fresh, light, and super aromatic ancestral wine. A lush nose reminiscent of IPA beers: fruity and herbaceous.
On the palate, it is fresh and fruity with an acidic finish and a slight bitterness.
