Fermentation temperatures are controlled in thermoregulated vats. Only indigenous yeasts are responsible for alcoholic fermentation which takes place at temperatures between 18 and 20°C. Malolactic fermentation is carried out. Aging is carried out in stainless steel vats. This wine is produced with small yields (35 to 40 hl/ha).
